Lime Cookies

These are the perfect little cookies for summer. They are light, buttery and with a hint of fresh lime they will melt in your mouth.

These simple cookies can be made in one bowl and all you’ll need is:

  • 1 1/2 cups of flour
  • 1/4 cup of sugar
  • 1/2 cup of butter
  • 1 tbsp of baking soda
  • 2 limes

Pre heat your oven to 375°F.

In a medium bowl cream together the sugar and the butter. Once you have a fluffy consistency add in the the flour, the baking soda and grate the rind of two limes in. Make sure the limes are very clean before you grate them, limes are notorious for having the worst chemicals on them.

Squeeze in the juice from half of one of those limes and mix it all together.  You may have to use your hands to help bring the dough together.

Once it’s ready, start forming small walnut sized balls and placing them on a cookie sheet lined with parchment paper.  If the dough is too dry and won’t stay together add half a tbsp of milk until you reach your desired texture.

Once all your dough in placed on your cookie sheet, lightly press down on the balls, flattening them slightly. Using a butter knife create a checkered patten by putting 4-5 lines one way on the cookie and the pressing 4 lines going the opposite way on the cookie.

Put them in the oven for 15 minutes at 375°F or until the bottoms are golden brown.
